Today's Beautiful Thing is fried bologna sandwiches. My Grandma Sally used to make them for lunch when I was a kid and tonight I made them for dinner. I can still remember watching her make them, the way they sizzled and popped up--she'd call them Mexican hats. I miss her so much.
